The grape

The cellar master

Nestled in the heart of Cognac country, Domaine Monnet extends over 23 hectares of stony groies (limestone clay soil), offering a fruity eau-de-vie with power and a beautiful roundness. The property of the salamander is located on the land deemed to be the most typical of the appellation fin bois.

Ugni Blanc is Monnet Cognac's favored grape variety. With its low levels of sugars and its acidity, it results, once distilled, in high quality eaux-de-vie bursting with aromas : citrus, banana... the sunny and audacious Monnet style starts blooming.

The cellar master is the one who transforms the raw diamond that is grape eau-de-vie into a bright, sunny and rare jewel.
Artist-alchemist, he creates the perfect combination of aromas to give each Monnet Cognac its distinctive and historic style.

The barrel maker

Essential craftsman to the production of our cognacs, the barrel maker builds, with fine grain French oak, the precious casks in which our cognacs will age. After shaping the barrel, the heating process is the crucial step where, following the cellar master's aromatic requests, the barrel maker will place the barrel around a flame which, according to heating levels, will turn the components of the wood into aroma precursors.

The distillation

True to tradition, Monnet Cognac uses a copper pot still double distillation to produce its cognacs. In order to achieve a greater aromatic richness and finesse, we distill with the lees, a method which better reveals the iconic sunny aromas of Monnet cognacs.

The harvest

The ageing

Each year, around the month of September, the grapes are ready to be harvested. According to past months weather, they will be more or less sun-filled, more or less sweet... every vintage is unique, proud witness of an ever-changing, surprising and marvelous Nature.

From a minimum of 2 years for our VS to more than 14 years for our XXO, our cognacs are always aged in French oak casks, selected specifically to reveal and complement the aromatic richness and singular style of Monnet Cognac.

The tasting

In a tulip glass, on ice or in a cocktail, the tasting of a Monnet Cognac is always a brilliant and lively moment, bringing forth a bright and warm aura and highlighting an art-de-vivre specific to the House of Monnet: bright, joyful, rich and complex, just like every drop of Monnet Cognac.
